Method
1¾ oz West Cork Black Cask Irish Whiskey
1¼ oz Fresh Lime Juice
1 oz Soda Water
¾ oz Simple Syrup
½ tsp grated ginger
½ oz Montenegro Amaro
4 Mint Leaves
Lime Wedge for Garnish
  1. Grate the ginger into Simple Syrup.

  2. Muddle mint and lime wedge into a highball glass and add all ingredients.

  3. Fill the highball with crushed ice and mix with a bar spoon.

  4. Top up with soda and float amaro over the top.

  5. Add Lime wedges and mint sprig for Garnish.
